Peanut Butter & Raisin Cookies


I made these really rather delicious Peanut Butter & Raisin Cookies for the 15 year-old rower in the family, who whilst developing quite a spectacular physique also smells semi-permanently like a pair of old socks - and is always hungry. He would drain the milk in a gulp, roll his eyes at the straws and then scoff the cookies!

100g butter, softened
1 cup crunchy peanut butter
1 cup brown sugar
1 egg
1 cup self raising flour
1/2 rolled oats
1/2 cup sultanas
Preheat oven to 160˚C (325˚F) and line 3 trays with baking paper. Beat butter, peanut butter and sugar together until soft. Add egg and beat well. Stir in flour, oats and sultanas. Roll into balls and flatten onto trays. Bake for 20 minutes, or until golden. Makes 34 medium-sized cookies. Great for packing into lunchboxes.
