Salmon & Asparagus Salad with Poached Eggs


It's 'healthy-dinner-for-husband-on-a-diet' Salmon and Asparagus Salad with Poached Eggs on the menu :)

5 asparagus spears, trimmed and halved
2 tbsp white vinegar
2 fresh eggs
Handful of salad greens eg mesculun
1 tbsp olive oil
1 tbsp lemon juice
salt & pepper
150g hot smoked salmon

Bring a medium pot of water to the boil and drop in asparagus for 2 minutes. Remove with tongs and refresh under cold running water. Reduce water to a simmer and add vinegar. Mix oil and lemon juice in a bowl and toss through salad greens and asparagus. Layer into a serving plate. One by one crack eggs into a small bowl and slide into the simmering water. Cook for 3-4 minutes for runny yolk eggs. While they are cooking arrange chunks of hot smoked salmon onto salad. Remove eggs from water with a slotted spoon, and arrange on salad. Dress with a sprig of dill, a sprinkling of sea salt and some freshly ground black pepper. Dinner for 1.
