Dinner party last night - so for dessert we had a slightly 'deconstructed' Eton Mess. It consists of layers of strawberries in Framboise (strawberry flavoured liqueur), strawberry cream and crumbled meringue.
16 medium strawberries
4 tbsp Framboise
1 tsp sugar
2 1/2 cups cream
2 tbsp strawberry powder (such as Fresh As)
8 large meringues, crumbled
Cut strawberries into quarters and put in a bowl with Framboise and sugar. Leave to infuse for at least an hour, and up to 8 hours. Whip cream and strawberry powder until soft peaks form. Divide half of the strawberries between 8 serving glasses. Top with 2 tbsp each of strawberry cream, followed by a tablespoon of crumbled meringue. Repeat the layering, reserving a couple of strawberry pieces to garnish.
