Nick's Prosciutto & Buffalo Mozzarella Salad

This is a recreation of a lovely Italian salad my husband made me for lunch last week. This is a very rare occurrence - but given that it was so good I am hoping it will be repeated before too long. 
23 years today...Happy Anniversary Baby - got you on my miiii - iiind! 



It really is more of a construction list than a recipe - this serves two as lunch or starter - and it is just such a delicious combination of flavours - salty prosciutto, mild beautifully textured mozzarella, ripe sweet tomato, lightly spicy basil and fruity olive oil......yum!!!!!


5-6 slices good quality prosciutto
2 big balls fresh buffalo mozzarella
2-4 ripe tomatoes
handful of basil leaves
drizzle of good quality extra virgin olive oil
sea salt and ground black pepper

Layer onto a plate and serve with crusty bread and a glass of red wine - perfection.
