Eggplant Roll Ups Stuffed with Ricotta, Cumin, Mint and Lemon


Sitting outside the Waiheke library using their kindly provided free internet, I am contemplating a soggy New Year's Eve on this gorgeous but sodden island. If you are lucky enough to be celebrating somewhere warm and dry, (or even if you're not) you might fancy giving these eggplant roll ups a whirl with a few cheery cocktails (ouzo based would be loverly). They are so simple, light and delicious - tasty and healthy, you gotta love that. Happy Neeeeeew Year!

3 tbsp olive oil
2 cloves garlic, sliced
2 medium eggplants
1 tbsp cumin seeds
350g fresh ricotta
1/2 cup freshly grated Parmesan
1 clove garlic, crushed
2 tbsp finely chopped fresh mint
sea salt and freshly ground black pepper
2 tbsp good quality extra virgin olive oil

Put the sliced garlic into the oil to infuse while you prepare the eggplant. Thinly slice the eggplants lengthwise, ideally each into about 8 slices 1cm thick. Heat the barbecue grill and brush each slice of eggplant with oil.  Lay on the grill, and as the undersides are cooking, brush the tops with oil. Cook for about 4-5 minutes each side, or until soft and cooked through. Leave to cool while you prepare Ricotta. Heat a frying pan over a medium heat and toast cumin seeds for 3 minutes, until fragrant. Mix Ricotta, Parmesan, lemon zest, garlic, mint,  salt and pepper together. Lightly crush cumin seeds, add to mix and combine well.

Place a tablespoon of ricotta at the base of each eggplant slice and roll up. Secure with a skewer and transfer to a serving plate. Drizzle with a little extra virgin olive oil to serve.

These can be prepared up to a day before, and rolled up an hour before serving. (The eggplant can also be cooked by brushing both sides with oil and baking in a 200˚C (390˚F) oven for 15 minutes.) Makes about 16.
