Summer Loving All-In Salad


OK, so my last two posts were a soup (albeit a very fresh and bright soup) and lasagne to warm up my northern hemisphere friends. Today we're back in the southern hemisphere with a super summer salad that I made for Fairfax to share. This is pretty much summer on a plate, perfect for the unbelievably beautiful, hot, sunny weather we have been experiencing. The salad creates an entire meal, complete with leafy greens, crunchy freshly blanched beans, creamy avocado, starchy new potatoes and rich hot smoked salmon, and the  dressing is all zingy with plenty of capers, lemon and dill and a little bit of garlic grunt. If any Aussie or New Zealand farmers or firemen out there are reading this (you never know!) good luck for handling the remainder of this heatwave around our countries, and from someone who has had a melanoma (me) please all you lovely beach-goers, don't forget to be sun safe!!! 700g small new potatoes
20 green beans or asparagus, trimmed
1/2 cup fresh dill, roughly chopped
1/3 cup capers, roughly chopped
½ cup good quality mayonnaise
2 tablespoons lemon juice
 finely grated zest of 1 lemon
1 clove garlic, crushed
2 medium or 3 small cos lettuces
500g hot smoked salmon or smoked chicken
2 avocados, halved and sliced


Bring a large pot of water to the boil, drop in potatoes and cook 15-20 minutes or until just cooked through. Drain and set aside to cool. Repeat process with beans, cooking for just 2 minutes, then drain under cold running water and set aside. In a small bowl mix half of the dill, half of the capers, mayonnaise, lemon juice, zest and garlic. Season to taste with salt and pepper and thin with 1-2 tablespoons water for easy drizzling. Layer lettuce, potatoes, beans, salmon and avocados onto a large serving platter. Pour over dressing and sprinkle with reserved dill and capers. Ta dah!!!! :) Serves 6
